Lentil, Sweet Potato and Sausage Soup

Ingredients

Soup

  • yellow onion diced
  • ¼ cup red lentils
  • 1 cup water
  • lb spicy Italian sausage ground or links with casings removed
  • sweet potato large
  • ½ tsp curry powder more or less depending on your taste
  • 2 tbsp fresh basil leaves Thai basil is best
  • 2 tbsp vegetable broth can substitute chicken broth
  • 4 tsp milk cashew, almond, coconut, or reg
  • salt and pepper to taste

Homemade Croutons for Topping

  • ½ slice bread

Instructions

  • Put 6 cups water in large pot and bring to a low boil. Add lentils and stir.
  • Add sweet potatoes, onion and garlic. Turn heat to low and cover.
  • In a separate pan, cook Italian sausage and add cooked meat to pot.
  • Cover and cook for 25 minutes or until lentils and potatoes are soft.
  • Add broth, milk, curry powder, and basil, stir, and cook an additional 5 minutes.
  • For croutons: dice bread, toss in olive oil, and cook in a pan over a medium-high stovetop until crisp.

Notes

Optional - top with croutons.
