- ½ cup chicken breast cooked and diced
- ½ cup peppers sauteed
- ½ cup onions sauteed
- 3 eggs beaten
- 1 ½ tsp fresh parsley chopped
- salt and pepper to taste

Preheat oven to 325 degrees.
Use an oven-safe pan and add olive oil to coat the bottom of the dish.
Add sauteed onions, peppers, and cooked and diced chicken to the baking dish.
Pour the beaten eggs over the onions, peppers, and chicken.
