Chicken and Pepper Frittata

Ingredients

  • 1 ½ tbsp olive oil
  • ½ cup chicken breast cooked and diced
  • ½ cup peppers sauteed
  • ½ cup onions sauteed
  • 3 eggs beaten
  • 1 ½ tsp fresh parsley chopped
  • salt and pepper to taste

Instructions

  • Preheat oven to 325 degrees.
  • Use an oven-safe pan and add olive oil to coat the bottom of the dish.
  • Add sauteed onions, peppers, and cooked and diced chicken to the baking dish.
  • Pour the beaten eggs over the onions, peppers, and chicken.
  • Add parsley and put the baking dish into preheated oven. Cook for about 10-15 minutes or until eggs are set.
