Tom Kha Gai Soup

Ingredients

  • ¾ tsp coconut oil
  • ¾ tsp ginger
  • ¼ tsp garlic minced
  • ¾ tsp red curry paste
  • ¼ cup mushrooms any fresh variety will work
  • 2 oz snap peas strings removed and cut into bite sizes pieces
  • cup onions diced
  • ½ cup chicken broth can substitute vegetable broth
  • 4 oz coconut milk organic preferred
  • cup chicken *raw or cooked, diced
  • fresh basil

Instructions

  • Put oil in a pot and cook on med/high heat until oil melts.
  • Add ginger, garlic, and red curry paste and stir well.
  • Add mushrooms, snap peas, onions, broth, and coconut milk. Cover and cook for 5 min.
  • *If you are using raw chicken, cut it into small pieces and add just after the garlic. Cook chicken through before adding the red curry paste.
  • Add cooked chicken and cook an additional 5 min. Garnish with fresh basil.
