- ¾ tsp coconut oil
- ¾ tsp ginger
- ¼ tsp garlic minced
- ¾ tsp red curry paste
- ¼ cup mushrooms any fresh variety will work
- 2 oz snap peas strings removed and cut into bite sizes pieces
- ⅛ cup onions diced
- ½ cup chicken broth can substitute vegetable broth
- 4 oz coconut milk organic preferred
- ⅙ cup chicken *raw or cooked, diced
- fresh basil
Get Recipe Ingredients
Put oil in a pot and cook on med/high heat until oil melts.
Add ginger, garlic, and red curry paste and stir well.
Add mushrooms, snap peas, onions, broth, and coconut milk. Cover and cook for 5 min.
*If you are using raw chicken, cut it into small pieces and add just after the garlic. Cook chicken through before adding the red curry paste.
Add cooked chicken and cook an additional 5 min. Garnish with fresh basil.
