Roasted Fennel with Lemon & Parmesan

Ingredients

  • ½ bulb fennel stems removed & chopped
  • ¼ tsp salt
  • ¼ tsp lemon zest
  • lemon lemon juiced
  • 1 tbsp parmesan grated
  • 1 tbsp olive oil

Instructions

  • Preheat oven to 400°.
  • In a small bowl mix together oil, zest, lemon juice, and salt. Pour over fennel and toss to coat.
  • Place parchment paper on a baking sheet. Add fennel and cook for 15 minutes. Add parmesan and cook for an additional 15 minutes. Enjoy!
