Roasted Sweet Potatoes and Pears

This is a delicious side for almost any dish. Sweet potatoes are packed with essential vitamins and minerals, including vitamin A, vitamin C, manganese, and potassium.

Ingredients

  • 1 sweet potato large, sliced
  • ¾ pear cored and diced
  • 1 ½ tsp olive oil
  • 1 ½ sprig fresh thyme leaves only
  • ¼ tsp sherry vinegar
  • 2 tbsp blue cheese crumbled
  • salt and pepper to taste

Instructions

  • Preheat oven to 350ºF.
  • In an oven-proof skillet, combine sweet potatoes and pears. Pour olive oil over the mixture and add thyme leaves. Add salt and pepper and mix.
  • Add the mixture to the oven. Cook for 25-30 minutes or until potatoes are tender.
  • Remove from oven. Drizzle with vinegar and sprinkle with cheese. Gently stir to combine ingredients.
  • Season with salt and pepper and serve.
