Instructions
Preheat oven to 350ºF.
In an oven-proof skillet, combine sweet potatoes and pears. Pour olive oil over the mixture and add thyme leaves. Add salt and pepper and mix.
Add the mixture to the oven. Cook for 25-30 minutes or until potatoes are tender.
Remove from oven. Drizzle with vinegar and sprinkle with cheese. Gently stir to combine ingredients.
Season with salt and pepper and serve.
