Shrimp and Cilantro Rice Bowl

Fragrant cilantro-infused rice forms the base for this delicious bowl that also incorporates shrimp, peas, and avocado.

Ingredients

  • ½ cup cooked rice
  • 1 pinch kosher salt
  • 3 tsp lime juice fresh squeezed
  • 2 tbsp cilantro fresh, chopped
  • ½ clove garlic minced
  • ¾ tsp soy sauce substitute Braggs Liquid Aminos for a gluten-free option
  • tsp crushed red pepper flakes
  • ¼ lb shrimp peeled and deveined
  • 2 tbsp peas
  • 2 tbsp yellow onion diced
  • ¾ tsp olive oil
  • ¼ avocado chopped

Instructions

  • Cook rice according to package and stir in salt, lime juice, and cilantro.
  • In a large bowl, combine garlic, soy sauce, and crushed red pepper flakes and stir. Add shrimp and toss until combined.
  • Add olive oil to a large skillet and heat over med.  Add shrimp with marinade and onions and cook until just pink.
  • Add peas and cook 1 additional minute.
  • Put rice into bowls and top with shrimp and pea mixture and finish with chopped avocado.
