Spicy Corn Soup

This sweet soup with a bit of a kick and a sprinkle of bacon is sure to please!

Ingredients

  • 1 cup corn frozen, thawed and drained
  • 1 strip bacon cooked and diced
  • white onion coarsely chopped
  • ½ tsp ground cumin
  • 2 cups water
  • jalapeño pepper large, deseeded and diced
  • 1 pinch salt
  • 1 tsp lime juice

Instructions

  • In a pot, sauté onion and bacon until onion is translucent. Add cumin and cook for another couple minutes.
  • Put corn in with onion, add water and jalapeño. Simmer for 20 minutes. Puree on high speed for 3 to 4 minutes. Add salt and lime juice. Enjoy!
