Fresh Salmon Tacos

Ingredients

  • 1 ½ oz salmon
  • tsp ground cumin
  • 1 tbsp plain yogurt
  • 2 tsp onion finely diced
  • ¾ tsp lemon juice fresh
  • 2 tsp cilantro fresh, chopped
  • 1 flour tortillas can use corn tortillas for gluten-free
  • ¼ avocado diced
  • 2 tbsp shredded lettuce
  • 1 pinch red pepper diced

Instructions

  • Sprinkle cumin over salmon steak and bake in a preheated oven 350° for 15 min. or until cooked throughout.
  • Mix together yogurt, onion, lemon juice, and cilantro.
  • Place salmon in a warmed tortilla, and top with yogurt sauce, avocado, and lettuce.  Serve immediately.
