Sweet Potato Salad

This is a refreshing and nutritious side dish with a perfect balance of sweet and tangy.

Ingredients

  • ½ sweet potato large, peeled and diced
  • ¼ cup yogurt plain, unsweetened (dairy-free preferred)
  • 1 tbsp green onion sliced
  • red pepper diced
  • 1 tbsp fresh parsley
  • ¾ tsp apple cider vinegar
  • 1 ½ tsp orange juice fresh squeezed is preferred

Instructions

  • Put water in a large pot over high heat. Bring to a boil.
  • Reduce heat to medium and add diced sweet potatoes. Cook for about 20 min. or until sweet potatoes are just soft but not mushy.
  • Drain sweet potatoes and run cold water over them to stop the cooking process and allow to cool.
  • In a separate bowl, add yogurt, peppers, green onion, parsley, vinegar, and juice. Mix well.
  • Once potatoes have cooled, add dressing to sweet potatoes,stir, and enjoy!
