Ingredients

  • 2 oz chicken cooked and diced
  • 1 leaf lettuce romaine or red leaf (large)
  • cup cooked quinoa cook according to package
  • 2 tbsp salsa any kind
  • 2 tsp coconut milk dairy free yogurt can be substituted
  • tomato diced

Instructions

  • Mix chicken, quinoa, salsa, yogurt (or substitute), and tomato in bowl.
  • Place filling inside lettuce leaf, roll up, and enjoy.
