In a large nonstick skillet, cook and stir the first six ingredients until spinach is wilted. Remove from heat; stir in cheeses.
Place the tortilla in a pan that has been lightly coated with olive oil. Fill half the tortilla with the spinach mixture and fold over. Cook over medium heat until golden brown, 1-2 minutes per side. Enjoy!
