Biscuits and Gravy

A healthier twist on this classic breakfast dish. Fluffy homemade biscuits smothered in a creamy, savory sausage gravy create a hearty and satisfying dish that's sure to become a family favorite.

Ingredients

Biscuits

  • ½ cup whole wheat flour
  • 2 ¼ tsp olive oil
  • ¾ tsp baking powder
  • ¼ cup milk

Gravy

  • ¼ cup milk
  • ¾ tsp flax seed ground
  • ¼ cup low-fat plain Greek yogurt
  • pound Italian ground sausage or breakfast sausage Boulder Brand is great if you can find it.

Instructions

  • Preheat oven to 450°.  Mix together all biscuit ingredients until all mumps are gone. Place heaping spoonful of dough on cookie sheet lined with foil. Bake for 10 minutes
    1/2 cup whole wheat flour, 3/4 tsp baking powder, 1/4 cup milk, 2 1/4 tsp olive oil
  • Put sausage in a pan. Cook over medium heat. Break up meat into small pieces as it cooks. When meat is almost done sprinkle ground flax seed over meat and stir well. Add yogurt and milk. Cook over low heat for 5-7 more minutes.
    1/4 cup milk, 3/4 tsp flax seed, 1/4 cup low-fat plain Greek yogurt, 2/3 pound Italian ground sausage or breakfast sausage
  • Slice biscuits in 1/2 and pour gravy over.

Notes

Makes 2 servings.
This isn't like many of my other recipes that are loaded with vegetables and lean protein but my family loves biscuits and gravy so I made some adjustments to the typical recipe. My kids & husband loved this!
