Simple Sautéd Spinach

Ingredients

  • 1 tbsp vegetable broth
  • ½ cloves garlic minced
  • 1 ½ tsp lemon juice fresh squeezed
  • 4 cups spinach fresh
  • ¾ tsp olive oil
  • salt and pepper to taste

Instructions

  • Rinse the spinach leaves and dry in a salad spinner or clean towel.
  • Add broth to a large pot and cook over medium heat.
  • When broth is simmering add garlic and cook for 2 min.
  • Add lemon juice and spinach and stir.
  • Cover the pot, turn the heat to high and cook for 2 min. U
  • Uncover and cook for another minute or until all spinach is wilted.
  • Use tongs to place spinach into a serving bowl.
  • Drizzle olive oil, add salt and pepper to taste, and serve.
