Banana Pecan Power Pancakes

Warm, nutty, and naturally sweet, these banana pecan pancakes made with cottage cheese and oats are like comfort on a plate - a perfect snack or start to your day!

Ingredients

  • 1 banana very ripe
  • ½ cup pecans
  • ½ cup oats
  • ½ cup cottage cheese
  • 1 egg
  • 2 tsp butter can use coconut oil

Instructions

  • Place all ingredients in a blender or food processor and blend until smooth.
  • Heat butter or coconut oil in a pan over medium heat.
  • Pour batter into heated pan to create pancakes.
  • Turn heat down to low and cover the pan.
  • Cook 3-5. minutes.
  • Turn the pancakes over and cook uncovered for another 3-5 minutes so both sides are golden brown.
  • Top with fruit if desired.

Notes

Makes 2 servings.
Batter can be stored in the refrigerator in an airtight container for up to 2 days. To reheat, warm in a pan with a bit of butter or place in a toaster until heated.
