Place all ingredients in a blender or food processor and blend until smooth.
Heat butter or coconut oil in a pan over medium heat.
Pour batter into heated pan to create pancakes.
Turn heat down to low and cover the pan.
Cook 3-5. minutes.
Turn the pancakes over and cook uncovered for another 3-5 minutes so both sides are golden brown.
Top with fruit if desired.
