Huevos Rancheros

Ingredients

  • 2 tbsp vegetable broth
  • 1 potato small, diced into small cubes
  • ½ cup black beans drained and mashed
  • 2 eggs
  • 2 tbsp salsa
  • ¼ cup cilantro chopped
  • 5-6 tortilla chips choose a corn tortilla chip if gluten free
  • salt and pepper to taste

Instructions

  • Put broth in a small pan and heat over medium/high heat.
  • Add potatoes, cover and cook for 15 minutes.
  • Stir in mashed beans and salsa.
  • Crack egg and place on top of potato and beans.
  • Turn heat to low and cover until eggs have set, approx. 7 min.
  • Place on plate, add chopped cilantro and serve with tortilla chips.
