Apple Flaxseed Muffins

Ingredients

  • cup whole wheat flour
  • 4 tsp flax seed ground
  • tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 4 tsp coconut sugar can substitute other healthy sweeteners
  • 1 egg beaten
  • 4 tsp coconut oil melted
  • ¼ cup applesauce
  • 2 ½ tbsp skim milk or dairy-free optional
  • 1 tsp vanilla
  • apple chopped finely
  • 1 ½ tbsps walnuts chopped (these are optional)

Instructions

  • Mix together all ingredients.
  • Pour batter into prepared muffin pan and bake for 15 - 18 minutes or until toothpick comes out clean and muffins just barely start to pull away from the sides of the tin.

Notes

Makes approximately 4 muffins.
