Baked Egg with Zucchini & Cheese

Ingredients

  • 1 tbsp vegetable broth
  • cup zucchini thinly sliced
  • cup onions diced
  • 1 dash dried basil
  • 1 slice havarti cheese
  • 1 egg

Instructions

  • Preheat oven to 350°.
  • Add broth to a small sauce pan and warm over med/high heat.
  • Add onions, zucchini, and basil. Cook covered until vegetables are soft, about 4 minutes.
  • Put vegetables and remaining liquid into a small oven-safe dish.
  • Place the cheese on top of the vegetables.
  • Crack the egg and pour gently over the cheese.
  • Cover with foil and cook for approx. 10 minutes or until egg white is set.
