Stuffed Sweet Potatoes

Ingredients

  • 1 sweet potato medium
  • 2 tbsp black beans drained & rinsed
  • 1 tbsp corn thawed
  • 1 tbsp red bell pepper diced
  • 1 tbsp cilantro chopped
  • 1 ½ tsp lime juice about ⅛ of a lime
  • ½ tsp olive oil
  • 1 pinch cumin
  • salt & pepper to taste
  • 1 tbsp Greek yogurt

Instructions

  • Mix beans, peppers, corn, olive oil and cumin.
  • Cook sweet potatoes until soft. Split each potato open.
  • Gently remove most of the orange part and smash.
  • Stir in bean mixture.
  • Put yogurt, lime juice and cilantro in a blender. Blend until smooth.
  • Drizzle yogurt sauce over sweet potatoes.
