- 1 sweet potato medium
- 2 tbsp black beans drained & rinsed
- 1 tbsp corn thawed
- 1 tbsp red bell pepper diced
- 1 tbsp cilantro chopped
- 1 ½ tsp lime juice about ⅛ of a lime
- ½ tsp olive oil
- 1 pinch cumin
- salt & pepper to taste
- 1 tbsp Greek yogurt

Mix beans, peppers, corn, olive oil and cumin.
Cook sweet potatoes until soft. Split each potato open.
Gently remove most of the orange part and smash.
Stir in bean mixture.
Put yogurt, lime juice and cilantro in a blender. Blend until smooth.
Drizzle yogurt sauce over sweet potatoes.
