Spinach Wontons

Servings: 1 Serving

Ingredients

  • ½ cup spinach fresh
  • 1 tsp non-fat Greek yogurt
  • 1 tsp cottage cheese
  • 2 tsp egg beaten
  • 1 tsp shredded mozzarella
  • 1 wonton wrapper

Instructions

  • Preheat oven to 350°.
  • Spritz mini muffin tin with oil.
  • Press wonton into a muffin tin.
  • Put in the oven for 5 minutes.
  • Put half of the spinach, yogurt, cottage cheese, eggs, and salt and pepper in a blender. Blend until smooth. Then empty the blender and do the 2nd half of those ingredients.
  • Pour spinach mixture into wontons and top with mozzarella cheese.
  • Put in oven and cook until spinach is set and cheese melted.
