Muesli Pancakes

Packed with whole grains, nuts, and fruit, they’re hearty, protein-rich, and naturally satisfying. Muesli is a better choice than granola because it has no added sugar!

Ingredients

  • ½ banana large, ripe
  • ½ cup cottage cheese
  • 1 egg
  • ¼ cup muesli
  • 2 tbsp pecans chopped
  • ½ tsp baking soda
  • 1 cup blueberries can substitute diced strawberries
  • 1 tsp butter or oil

Instructions

  • Blend all ingredients
  • Combine ingredients. Pour the banana mixture into a bowl and fold in the muesli and chopped pecans. Mix until just combined, being careful not to overmix.
  • Cook the pancakes. Heat a non-stick skillet over low heat and grease with butter or oil. Scoop batter for pancakes into pan
  • Flip and finish. Cover and Cook for 2–3 minutes/ Flip and cook for another 2-3 minutes, until golden brown.
  • Microwave berries or cook in pan over low heat until soft and juicy. Smoosh with a fork and pour over pancakes

Notes

Makes 2 servings - approximately 4 pancakes.
