Baked Berry Oatmeal

Ingredients

  • 1 cup milk dairy or nondairy
  • 1 egg
  • 1 tbsp pure maple syrup
  • 1 cup blueberries
  • 2 tbsp butter melted and slightly cooled
  • 2 tbsp unsweetened applesauce or mashed banana
  • 1 ½ cups old-fashioned whole rolled oats
  • ½ tsp baking powder
  • ½ tsp ground cinnamon
  • ½ tsp pure vanilla extract can use almond extract
  • tsp salt a small pinch

Instructions

  • Preheat oven to 350°F. Grease a 1 1/2-quart baking dish.
  • In a large bowl, whisk all ingredients together. Pour into the prepared pan and top with nuts, if using.
  • Bake for 35 minutes, until the center is almost set.
  • Cool 5 minutes before serving. Enjoy warm, with yogurt if desired.
