Ingredients

Dressing

  • 2 tsp peanut butter no sugar added
  • 2 tsp water
  • ½ tsp olive oil
  • 1 tsp seasoned rice vinegar
  • 1 tsp agave or honey
  • 1 tsp soy sauce low sodim
  • tsp sesame oil
  • ¼ lime juiced

Salad

  • 1 cup cole slaw mix
  • 2 tsp cilantro chopped
  • 3 tbsp edamame shelled
  • ½ green onion chopped
  • 2 tbsp carrots shredded
  • 2 tbsp red pepper diced
  • cup chicken cooled and shredded or chopped

Instructions

  • Make the Dressing: Blend all peanut dressing ingredients until smooth. Set aside or refrigerate if making ahead.
  • Assemble the Salad: In a large bowl, combine coleslaw mix, cilantro, edamame, green onion, carrot, bell pepper, and chicken.
  • Toss with dressing.
