Heat olive oil in a small pot over medium heat. Add onion, mushrooms, and garlic. Cook 5–6 minutes, until softened and lightly browned.
Stir in oats and water. Bring to a boil, then reduce heat to low. Simmer 25–30 minutes, stirring occasionally, until oats are tender and mixture thickens.
Season with salt and pepper.
Serve topped with a fried egg, avocado slices, arugula, parmesan, or any other optional garnishes you choose!
