Put butter/oil in a large skillet and cook over medium heat until melted. Add flour and stir constantly, until brown in color, about 10 minutes.
Add onions, peppers, celery, carrots, garlic, cajun seasoning and stir. Add sausage, diced tomatoes, chicken broth and turn up heat, and bring to a boil.
Once boiling, reduce heat to low and simmer for about 45 minutes or until sauce is thickened, stirring occasionally. Add shrimp & green onions, stir, and cook for 10 minutes. If needed add salt and pepper.

Makes 2 servings.Option: Serve over rice and sprinkle with fresh parsley.
