Shrimp & Sausage Creole

Ingredients

  • 1 tbsp butter can substitute olive oil
  • 1 tbsp all-purpose flour
  • ¼ yellow onion chopped
  • ¼ bell pepper chopped
  • ½ stalk celery chopped
  • ¼ cup carrots chopped
  • ¾ cloves garlic minced
  • 2 oz andouille sausage sliced into 1/2" pieces
  • 1 ½ tsp cajun seasoning
  • ½ cup fire-roasted tomatoes diced
  • 1 cup chicken broth
  • ¼ lb shrimp peeled and deveined
  • ¾ green onions sliced
  • salt & pepper to taste

Instructions

  • Put butter/oil in a large skillet and cook over medium heat until melted. Add flour and stir constantly, until brown in color, about 10 minutes.
  • Add onions, peppers, celery, carrots, garlic, cajun seasoning and stir. Add sausage, diced tomatoes, chicken broth and turn up heat, and bring to a boil.
  • Once boiling, reduce heat to low and simmer for about 45 minutes or until sauce is thickened, stirring occasionally. Add shrimp & green onions, stir, and cook for 10 minutes. If needed add salt and pepper.

Notes

Makes 2 servings.
Option: Serve over rice and sprinkle with fresh parsley.
