Salmon with Sweet Potato Hash

Ingredients

  • ¼ pound salmon
  • 2 tsp oil divided
  • ½ sweet potato cooked
  • 2 tbsp celery diced
  • 2 tbsp onions diced
  • 1 egg optional
  • ¼ tsp dill

Instructions

  • Sprinkle salmon with dill. Put half the oil in cast iron pan. Put over high heat. Once pan is very hot, add salmon fillet. Cook for 2 min and once the salmon releases from the pan flip and cook until it reaches your desired doneness. Remove the salmon from the pan.
    Peel and cut sweet potatoes into small bite-size pieces. Put other half the oil into pan, once hot add onions, celery and sweet potatoes. Cook for 6 minutes over low heat. Break salmon into bite-size pieces, add to pan, and stir. If you want a little extra protein and flavor, add 1 egg on top of salmon hash. Continue to cook on low, cover, and cook until egg is just set.
