Pumpkin Scone

Ingredients

  • ¼ cup pecans chopped
  • ½ cup flour
  • ¼ banana ripe
  • ¾ tsp baking powder
  • 1 ½ tsp pure maple syrup
  • ¼ tsp cinnamon
  • tsp allspice
  • 1 ⅓ tbsp coconut oil melted; can substitute butter
  • 1 ¼ cup pumpkin puree
  • 1 tbsp milk almond milk, low-fat milk, etc.
  • tsp vanilla extract

Instructions

  • Preheat oven to 400º. 
  • Mash the banana with the back of a fork in a bowl. Add the remaining ingredients and stir well.
  • Place a small ball of dough on a greased baking pan. Shape the dough into a small loaf or into a slight crescent shape. Cook for 20 minutes.
