Heat a quarter of the olive oil in a pan. When hot add fish. Cook until golden and flip. Cook for another 3-5 min. Set aside.
In a separate pan, add 1/4 of the olive oil. When hot add garlic and cook until almost golden. Add zucchini noodles, lemon zest, and juice and cook for about 4 min or until “noodles” are soft.
In a separate bowl, combine tomatoes, avocado, onion, the remaining olive oil, salt and pepper.
Place noodles on a plate and top with the fish and cover with tomato mixture. Top with fresh basil & Parmesan ribbons.
