Vegetarian "Meat"balls

These are an excellent and scrumptious substitute if you prefer veggies to meat!

Ingredients

  • ¼ cup cauliflower
  • ¼ cup broccoli include stems
  • ¼ cup carrots grated
  • 1 cup lentils red or yellow, cooked
  • 2 clove garlic minced
  • cup old-fashioned oats not steel cut oats (certified gluten-free if needed)
  • 1 egg
  • 1 tbsp flaxseed ground

Instructions

  • Put cauliflower and broccoli into food processor until finely minced. Place in bowl.
  • Put carrots in the food processor until finely minced and add to other veggies in bowl.
  • Add cooked lentils (very soft), garlic, oats, eggs, and flaxseed to the bowl and mix well.
  • You can choose to add *optional ingredients. Form into small balls. Bake in an oven preheated to 400F on a baking tray – 15-20 mins.

Makes 2 servings.
*Optional Ingredients
For Italian flavor:
1 tablespoon Italian seasoning
2 tsp fennel seed
2 Tablespoons tomato paste
For Mexican Flavor:
1 tsp cayenne pepper
1 tsp cumin
2 tbsp salsa
For Asian Flavor:
1 tbsp soy sauce or 2 tbsp hoisin
1 tbsp siracha or sweet chili
