Chicken (or Turkey) Fajita

Ingredients

  • ½ cup chicken cooked and diced, can substitute turkey
  • 1 tortilla
  • ¼ cup peppers roasted
  • ¼ onion roasted
  • ¼ zucchini roasted
  • ¼ cup salsa your choice, no sugar added

Instructions

  • Preheat oven to 425º.
  • Place the diced vegetables on a baking sheet. Drizzle with olive oil and roast in the oven for 20-25 minutes or until tender.
  • Combine the vegetables, cooked chicken, and salsa in a bowl.
  • Place the mixture in a tortilla, wrap, and enjoy!
