Heat up a saucepan with olive oil on medium-high heat. Sauté the diced ripe tomatoes for 2-3 minutes, then add the already cooked shrimp and cook 3-4 minutes, making sure not to overcook them.
Add the roasted red bell peppers, and the cooked onions into the pan with the shrimp and tomatoes.
Dice the olives and add them and the rest of the ingredients to the shrimp, onions, and peppers. Salt and pepper to taste and serve.
