Ingredients

  • ½ tsp olive oil
  • ½ tomato ripe, diced
  • 3 olives your choice, we recommend kalamata
  • 3 med-large shrimp you can add more or less
  • 1 ½ tsp feta cheese
  • ½ tsp oregano
  • 2 tbsp red bell peppers roasted
  • 2 tbsp onions carmelized

Instructions

  • Heat up a saucepan with olive oil on medium-high heat. Sauté the diced ripe tomatoes for 2-3 minutes, then add the already cooked shrimp and cook 3-4 minutes, making sure not to overcook them.
  • Add the roasted red bell peppers, and the cooked onions into the pan with the shrimp and tomatoes.
  • Dice the olives and add them and the rest of the ingredients to the shrimp, onions, and peppers. Salt and pepper to taste and serve.
