Ingredients

  • ¾ cup chicken cooked, cubed
  • 1 tbsp currants
  • ½ cup arugula packed, whole or chopped
  • 1 stalk celery finely chopped
  • ½ tsp lemon juice
  • 1 ½ tsp mayonnaise
  • 1 tbsp plain Greek yogurt
  • 1 tbsp tarragon fresh, minced
  • ½ tsp curry powder
  • salt and pepper to taste
  • lettuce or rice you choose!

Instructions

  • Add all ingredients one at a time, into a bowl and mix. Serve on a bed of rice or your choice of greens.
