Mushroom, Arugula and Goat Cheese Frittata

Ingredients

  • 1 egg
  • cup milk almond, coconut, or cow's
  • ¼ tbsp butter
  • ¼ cup mushrooms sliced
  • ¼ cup arugula packed, chopped
  • 1/16 cup goat cheese crumbled

Instructions

  • Preheat the oven to 375.
  • Beat the eggs and milk together and set aside.
  • Melt the butter over medium-high heat in an oven-safe pot. Add the mushrooms and cook until almost soft. Then add the arugula, stir,  and let it wilt. Add the eggs/milk. Crumble the goat cheese over it.
  • Pour into prepared baking dish and bake for 20 minutes or until set.
