Ingredients

  • ½ cup zucchini sliced thin
  • cup ground beef cooked, grassfed is best or chorizo
  • 1 egg
  • 1 tsp avocado oil

Instructions

  • Heat oil in a pan. Add single lawyer of zucchini and cook over medium heat for 4 minutes. Flip zucchini over and sprinkle cooked ground beef on top. Add 1 egg. Cover and cook over low heat until egg is set (about 5 min).

Notes

Optional: Top with diced avocado and salsa
