- ½ cup vegetables cooked, your choice
- ¼ cup sauerkraut
- ⅛ cup thousand island dressing optional recipe in notes
- ½ slice Swiss cheese

Preheat oven to 325º.
Coat oven-safe pan with olive oil.
In a large bowl mix veggies, sauerkraut, and thousand island dressing and pour into a baking pan. Cover with cheese.
Place in preheated oven for 20 minutes or until hot and cheese is melted.
Thousand Island Sauce:
2/3 cup plain Greek organic yogurt
2 tbsp tomato paste
3 tbsp relish
Mix all ingredients.
