Tomato Salad

A great side for any meal!

Ingredients

  • ¼ tomato diced, I love the Heirlooms
  • 1 ½ tsp red onion diced small
  • ¾ oz mozzarella fresh, diced
  • 1 tbsp basil fresh
  • 1 ½ tsp balsamic vinegar
  • 1 ½ tsp olive oil
  • salt and pepper to taste

Instructions

  • Cut tomatoes into thick slices (approximately 4 slices/tomato).
  • Place on platter.
  • Cover tomatoes with onions, mozzarella, basil. Drizzle with vinegar and oil. Add salt and pepper to taste.
