  • ¾ cup cooked quinoa cook according to package
  • cup carrots shredded
  • cup peas
  • cup red peppers diced
  • cup garbanzo beans
  • 1 tsp parsley fresh, use less if dried
  • 2 tsp olive oil
  • ½ tsp fresh lime juice
  • salt & pepper to taste

Instructions

  • Mix in all ingredients. If you'd like, garnish with a few tomatoes or a lime, and enjoy!
