Smoked Salmon Salad

Ingredients

Salad

  • 2 cups mixed greens
  • 1 tbsp dill fresh, chopped
  • 1 ½ oz smoked salmon substitute tempeh for vegetarian
  • ¼ cups white beans cooked
  • ½ tsp capers

Vinaigrette

  • ¼ tbs olive oil
  • 2 tsp rice wine vinegar
  • 4 tsp water
  • 1 tsp lemon juice
  • ¼ tsp dijon mustard
  • ¼ tsp parsley chopped
  • 2 tsp shallot chopped
  • salt and pepper to taste

Instructions

  • Place all vinaigrette ingredients in a jar. Shake well until thoroughly mixed.
  • Toss salad greens in vinaigrette. Top salad with smoked salmon pieces, beans, capers, and dill.
