Babaco Cold Compote (Compota fría de babaco)

Babaco is a delicious citrus fruit often described as a blend of papaya, pineapple, and kiwi, with a hint of citrus.

Ingredients

  • 1 ½ cups babaco chopped, can substitute pineapple
  • 1 ½ tbsp sugar
  • ½ cinnamon stick
  • ½ cup water
  • 1 cloves
  • 1 allspice

Instructions

  • Chop babaco into small, bite-sized pieces and set aside.
  • Heat a pan on medium-high heat.
  • Add water, sugar, cinnamon, and allspice.
  • Simmer but don't boil.
  • Pour mixture over chopped fruit (pineapple works well, too,). Add cloves before serving and enjoy!
