- ¼ cup chicken breast cooked, boneless, skinless, chopped
- ⅛ cup cucumbers diced
- 1 tbsp celery diced
- 1 tbsp green onion sliced
- 1 tbsp cilantro chopped
Dressing
- ¼ clove garlic minced
- 1 tbsp white wine vinegar
- 1 tbsp olive oil
- ¼ tsp cumin
- ¼ tbsp lime juice fresh

Cook quinoa according to package and then cool to room temperature and add chicken, cucumbers, celery, onions, and cilantro. Stir well.
In a separate bowl add all dressing ingredients. Stir well or blend.
Pour dressing over quinoa. Refrigerate or enjoy at room temperature.
