BBQ Chicken Tortilla Pizza

This is a quick way to whip up a luscious pizza.

Ingredients

  • 1 tbsp bbq sauce Be sure to look for sauces with little or no added sugar!
  • 1 whole wheat tortilla
  • ¼ cup chicken cooked and diced
  • 1/16 cup red onion diced
  • 1 tbsp cheese shredded, any kind
  • ½ tsp olive oil
  • 1 ½ tsp fresh cilantro chopped

Instructions

  • Add olive oil to a large pan (don't put your pan on the stove quite yet!).
  • Rub the tortilla around in the pan on both sides to cover with oil.
  • Spread the BBQ sauce evenly over the top side of your tortilla.
  • Top the tortilla with chicken, red onion, and cheese.
  • Turn your stovetop to medium-low heat and heat the oiled pan.
  • Place the tortilla in the heated pan and cover the pan. Cook for 5-7 minutes on medium-low heat so the cheese melts.
  • Plate your pizza and top with some fresh cilantro. Enjoy!
