Preheat oven to 400º F.
In a mixing bowl, add warm water and yeast and stir until it’s dissolved. Let it set for 5 minutes. Add flour (you can use gluten-free flour if you like) and the Parmesan cheese and knead until well mixed.
Grease & lightly flour a cooking stone or cookie sheet. Form a crust with the dough (as circular as you can). Cook the crust for 10 minutes.
Take the crust out of the oven and spread the tomato paste onto the crust until about 1/2" from the edge.
Sprinkle the dried oregano, garlic, mushrooms, olives, and crushed red pepper, onto the sauce and finish with a layer of spinach and cheese.
Put the pizza back in the oven at 400º F. and bake for about 15-20 minutes or until the cheese starts to brown. Serve and enjoy!
