To cook the beets, cut off the green tops and wash the beets, peeling off the rough, outer layer with a vegetable peeler. Then, slowly simmer the beets for 40-60 minutes until a knife can enter it easily. Drain the beets and cut them up into bite-sized pieces.
Add the oil, vinegar, and onion to the beets and and crumble goat cheese on top (optional) and enjoy!!!
