Corned Beef & Cabbage Soup

Ingredients

  • 1 cup raw cabbage chopped
  • 2 tbsp green onions chopped
  • 1 clove garlic minced
  • cup carrots sliced
  • 1 cup vegetable broth can substitute chicken or bone broth
  • 3 oz corned beef
  • tsp fennel seed
  • 1 pinch cayenne pepper
  • salt and pepper to taste

Instructions

  • Put broth into a pot.
  • Add diced cabbage, minced garlic, and carrots. Cook until until vegetables are soft (cook on medium heat, approx. 10 minutes).
  • Add green onions, corned beef (you can buy from the deli or cook a corned beef at home), fennel seed, and cayenne. Simmer for 5 additional minutes, then serve.
  • Is great with some hot sauce on top :)
