pork tenderloin

whole wheat flour
Use a gluten-free flour if gluten sensitivity

olive oil

tbsp
plain yogurt
2
tbsp
chicken broth
can substitute vegetable broth; low-sodium, organic is best

Kalamata olives
pitted and chopped

capers
1 ½

parsley
fresh, chopped

Instructions
Slice pork into 1” thick pieces. Dust both sides of each piece of pork with flour.
Put half the oil in a pan and heat.
Add 1/2 of the pork and cook for 3 minutes on each side. Remove pork and put on a plate.
Add the remaining oil and pork to the pan. Again, cook 3 minutes on each side.
Add all pork to the pan and pour in broth. Bring to a boil.
Turn down heat to low and stir in yogurt, olives, and capers. Cook for 3 additional minutes. Sprinkle with parsley and serve.
