Pork with Olive-Caper Sauce

Ingredients

  • ¼ pound pork tenderloin
  • 1 tbsp whole wheat flour Use a gluten-free flour if gluten sensitivity
  • 1 ½ tsp olive oil
  • 2 tbsp plain yogurt
  • 2 tbsp chicken broth can substitute vegetable broth; low-sodium, organic is best
  • 2 tbsp Kalamata olives pitted and chopped
  • 1 ½ tsp capers
  • 1 ½ tsp parsley fresh, chopped

Instructions

  • Slice pork into 1” thick pieces. Dust both sides of each piece of pork with flour.
  • Put half the oil in a pan and heat.
  • Add 1/2 of the pork and cook for 3 minutes on each side. Remove pork and put on a plate.
  • Add the remaining oil and pork to the pan. Again, cook 3 minutes on each side.
  • Add all pork to the pan and pour in broth. Bring to a boil.
  • Turn down heat to low and stir in yogurt, olives, and capers. Cook for 3 additional minutes. Sprinkle with parsley and serve.
