Salad with Blueberries & Goat Cheese

Ingredients

Salad

  • 1 cup mixed greens or lettuce of your choice
  • 2 tsp green onion
  • 2 tbsp blueberries fresh, strawberries work well too
  • 2 ½ tsp goat cheese crumbled

Dressing

  • 2 ½ tsp red wine vinegar
  • 2 ½ tsp olive oil
  • 2 tsp orange juice no sugar added
  • ¼ tsp dried dill
  • salt and pepper to taste
  • chopped nuts optional

Instructions

  • Put the lettuce into a large salad bowl. Top with green onions and blueberries.
  • For dressing put the remaining ingredients (except the goat cheese) in a small bowl and mix well. When ready to serve pour dressing over lettuce and top with crumbled goat cheese.
