Ingredients
Salad
- 1 cup mixed greens (or lettuce of your choice)
- 2 tsp green onion
- 2 tbsp blueberries (fresh, strawberries work well too)
- 2 ½ tsp goat cheese (crumbled)
Dressing
- 2 ½ tsp red wine vinegar
- 2 ½ tsp olive oil
- 2 tsp orange juice (no sugar added)
- ¼ tsp dried dill
- salt and pepper to taste
- chopped nuts (optional)
Instructions
- Put the lettuce into a large salad bowl. Top with green onions and blueberries.
- For dressing put the remaining ingredients (except the goat cheese) in a small bowl and mix well. When ready to serve pour dressing over lettuce and top with crumbled goat cheese.

Wonderful combination of flavors! Hubby and I loved it! I didn’t have any green onions and used white wine vinegar since that’s what I had. Added chopped pecans.
