Ingredients 

Salad

  • 1 cup mixed greens (or lettuce of your choice)
  • 2 tsp green onion
  • 2 tbsp blueberries (fresh, strawberries work well too)
  • 2 ½ tsp goat cheese (crumbled)

Dressing

  • 2 ½ tsp red wine vinegar
  • 2 ½ tsp olive oil
  • 2 tsp orange juice (no sugar added)
  • ¼ tsp dried dill
  • salt and pepper to taste
  • chopped nuts (optional)

Instructions 

  • Put the lettuce into a large salad bowl. Top with green onions and blueberries.
  • For dressing put the remaining ingredients (except the goat cheese) in a small bowl and mix well. When ready to serve pour dressing over lettuce and top with crumbled goat cheese.

    Wonderful combination of flavors! Hubby and I loved it! I didn’t have any green onions and used white wine vinegar since that’s what I had. Added chopped pecans.
