1 ½cupssweet potatocooked until soft and do not use the peel
2eggs
1tbsorange juice concentrate
¼cupcoconut oilmelted
¼cupcoconut flour
¼cupalmond flour
1tbsxanthan gum
1tspbaking soda
¼cupraisins can substitute dried cranberries
1tbsraw honeyoptional

Instructions
Preheat oven to 350ºF.
Put the first 4 ingredients into a blender, blend until smooth, and pour into a large bowl.
Add remaining ingredients and stir well.
Use coconut oil to grease your loaf pan.
Place mixture into 1 large loaf pan or 2 small ones. Bake for 30-40 minutes or until the middle is set and a toothpick inserted into the center comes out clean. Enjoy!
