Mushroom Gravy

Ingredients

  • ¼ tsp olive oil
  • 1 tbs yellow onions finely chopped
  • ¼ clove garlic minced
  • 1 ¼ tsp flour unbleached or substitute with gluten-free flour
  • 1 cup mushrooms such as cremini, chanterelle, morel, shiitake, and white button sliced
  • 6 ½ tbs chicken broth low-sodium (use vegetable broth for vegetarian)
  • tsp fresh thyme chopped
  • salt and pepper to taste

Instructions

  • Heat oil in skillet over medium heat. Add onions and garlic and cook for 2 min.
  • Add flour and stir until combined.
  • Add mushrooms. Cook for about 5 minutes, until the mushrooms are tender.
  • Add stock mixture to the flour mixture, stirring constantly. Bring to a boil over medium-high heat.
  • Add thyme and cook until the sauce thickens, about 5 minutes. Season with salt and pepper and serve.
