- ¼ tsp olive oil
- 1 tbs yellow onions finely chopped
- ¼ clove garlic minced
- 1 ¼ tsp flour unbleached or substitute with gluten-free flour
- 1 cup mushrooms such as cremini, chanterelle, morel, shiitake, and white button sliced
- 6 ½ tbs chicken broth low-sodium (use vegetable broth for vegetarian)
- ⅗ tsp fresh thyme chopped
- salt and pepper to taste

Heat oil in skillet over medium heat. Add onions and garlic and cook for 2 min.
Add flour and stir until combined.
Add mushrooms. Cook for about 5 minutes, until the mushrooms are tender.
Add stock mixture to the flour mixture, stirring constantly. Bring to a boil over medium-high heat.
Add thyme and cook until the sauce thickens, about 5 minutes. Season with salt and pepper and serve.
