Healthy Hash Browns- Made with Spaghetti Squash

Ingredients

  • ¼ spaghetti squash cooked and strands pulled out from squash
  • 1 pinch sea salt
  • 2 ¼ tsp coconut oil
  • 1 tsp green onion optional garnish
  • 1 tsp cilantro optional garnish
  • 1 tbsp yogurt no sugar added, optional garnish

Instructions

  • Mix squash with a pinch of sea salt.
  • Compact the squash in your hands to form a "hash brown-like" patty. Use a kitchen towel or paper towel to help squeeze out any extra moisture from each patty.
  • Heat a skillet up to medium heat, and add coconut oil. When oil is hot, gently add a couple of patties to the pan.
  • Pan-fry each side of the patties for about 5 to 7 minutes, or until golden brown and thoroughly heated all the way through.
  • Top with optional garnish if you like and enjoy.
