Grapefruit & Shrimp Caesar Salad with Dressing

Ingredients

Salad

  • head romaine lettuce
  • 1 oz shrimp cooked and chilled
  • 2 oz grapefruit

Dressing

  • 1/12 cup low-fat cottage cheese sub dairy-free yogurt for dairy-free option
  • 1 pinch black pepper
  • anchovy optional
  • ½ tsp milk any kind
  • 2 tsp grapefruit juice
  • clove garlic
  • 1 tsp parmesan cheese
  • sesame seeds sprinkle on (optional)

Instructions

  • Tear lettuce into pieces and place in bowl with shrimp and grapefruit segments. 
  • Mix all remaining ingredients except Parmesan cheese in a blender at high speed to make dressing. Fold in Parmesan, and chill for 1 hour. Add dressing to salad and enjoy!
